It’s really good.  Has a nice texture. It is great when you slice it up and put it in an omelet or frittata-like entree.  Also good on a roll.  What is really great is making a good old sausage  peppers and onions sandwich!  Like the kind I used to love at the San Gennaro Festival in NYC.  Get a delicious italian roll, cook one of these links, slowly cook onions and green peppers and put them al lon the cut roll with a bit of mustard..
