Kite Hill: The worlds best tasting non dairy cheese.

Recently I have been using a non dairy cheese with fantastic results:  Cassucio Soft Fresh,  by Kite Hill.  It is made in the US, and distributed by Whole Foods.  It is found in their regular cheese location, right there with all the dairy cheeses.   This cheese is great as a vegan substitute for most mild cheeses, such as ricotta, farmer’s cheese, monterrey jack and cottage cheese.   It tastes nothing like the other vegetarian/vegan cheeses, most of which are soy based.  Kite hill is made from a nut “milk”, made in house by Kite Hill itself.

I became aware and intriqued by this product after reading about it in Food and Wine Magazine.   It explained how this cheese was actually a high tech product, based on a huge investment of time and experiment.  Which is cool, right?  But without a great taste it would mean nothing.  I drove on down to Whole Foods and picked some up, along with the bree like “White Alder” style they make.  The “White Alder” was fine, and did substitute well for bree, but the “Cassucio Soft Fresh” truly knocked me out.  Myself and basically everyone else that I have shared it with.

So all of you out there that want to avoid dairy, but love cheese and dishes made with cheese can rejoice with me and dig in to some fantastic non dairy cheese.  How about a burrito?  Omlette?  Pierogi?  Pizza?  It’s all possible, and very delicious.  Get it.  Get it now!
