I had dinner last night at Vedge.  By now I’ve been there several times, but for some reason it was especially nice last night.  One day I am going to do a proper review for this restaurant – but not today. Kite Hill: The worlds best tasting non dairy cheese.

Recently I have been using a non dairy cheese with fantastic results:  Cassucio Soft Fresh,  by Kite Hill.  It is made in the US, and distributed by Whole Foods.  It is found in their regular cheese location, right there with all the dairy cheeses.   This cheese is great as a vegan substitute for most mild cheeses, such as ricotta, farmer’s cheese, monterrey jack and cottage cheese.   It tastes nothing like the other vegetarian/vegan cheeses, most of which are soy based.  Kite hill is made from a nut “milk”, made in house by Kite Hill itself.
